Description

This Reuben Dip Recipe is a warm, cheesy appetizer that combines the classic flavors of a Reuben sandwich in an easy-to-serve dip. Cream cheese, Swiss and mozzarella cheeses, tangy sauerkraut, corned beef, and Thousand Island dressing blend together and bake to bubbly perfection, making it ideal for parties or casual gatherings.

Ingredients

Scale

Cheese and Cream Base

  • 8 oz cream cheese, softened
  • 1 cup shredded Swiss cheese
  • 1 cup shredded mozzarella cheese

Additional Ingredients

  • ½ cup Thousand Island dressing
  • 1 cup sauerkraut, drained and squeezed dry
  • 1 cup chopped corned beef or pastrami

Instructions

  1. Preheat Oven: Preheat the oven to 375°F to ensure it’s ready for baking your dip evenly and thoroughly.
  2. Combine Cream Base: In a large mixing bowl, combine the softened cream cheese with shredded Swiss and mozzarella cheeses along with the Thousand Island dressing. Stir until the mixture is smooth and uniformly blended.
  3. Add Sauerkraut and Meat: Fold in the drained sauerkraut and chopped corned beef or pastrami. Mix well to combine all the flavors evenly throughout the dip.
  4. Transfer to Baking Dish: Grease an 8×8-inch baking dish or an oven-safe skillet, then spread the combined mixture evenly inside.
  5. Bake the Dip: Bake in the preheated oven for 20-25 minutes, until the dip is hot, bubbly, and the edges turn a golden brown.
  6. Cool and Serve: Remove from the oven and let the dip cool slightly before serving. Enjoy it warm alongside rye bread, crackers, or toasted baguette slices.

Notes

  • Use deli-sliced corned beef finely chopped to save preparation time.
  • You can make this dip in a slow cooker on low for 2–3 hours as an alternative cooking method.
  • For an extra cheesy finish, top the dip with additional cheese before baking.
