Description

These Ranch Garlic Parmesan Chicken Skewers combine juicy chicken cubes marinated in a creamy, flavorful ranch and parmesan mixture, then grilled to perfection. Perfect for a quick and delicious meal that’s packed with savory garlic and zesty herbs, these skewers are ideal for outdoor grilling or a tasty family dinner.

Ingredients

Scale

Marinade Ingredients

  • ½ cup ranch dressing (store-bought or homemade)
  • ¼ cup grated parmesan cheese
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon dried parsley (or fresh parsley, chopped)
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • 1 teaspoon lemon juice (optional, for extra tang)

Chicken and Skewers

  • 1 ½ lbs boneless, skinless chicken breasts or thighs, cut into 1-inch cubes
  • Wooden or metal skewers

Instructions

  1. Prepare the Marinade: In a medium bowl, combine ranch dressing, grated parmesan cheese, olive oil, minced garlic, parsley, black pepper, garlic powder, and optional lemon juice. Mix thoroughly until smooth and well blended.
  2. Marinate the Chicken: Transfer the chicken cubes into a large resealable plastic bag or shallow dish. Pour the marinade over the chicken, making sure all pieces are coated evenly. Seal or cover and refrigerate for at least 30 minutes or up to 2 hours to develop flavor.
  3. Prepare the Skewers: If using wooden skewers, soak them in water for 15 minutes to prevent burning during grilling. Thread the marinated chicken cubes onto the skewers, leaving a small space between pieces to ensure even cooking.
  4. Preheat the Grill: Heat your grill to medium-high. Lightly oil the grill grates to prevent sticking if necessary.
  5. Grill the Skewers: Place the loaded skewers on the grill and cook for 10–15 minutes, turning occasionally. Grill until the chicken is cooked through and reaches an internal temperature of 165°F (75°C). The outside should be golden brown with light charring.
  6. Rest and Garnish: Remove skewers from the grill and let rest for a few minutes. Garnish with extra chopped parsley or parmesan cheese if desired. Serve hot with your favorite sides or dipping sauces.

Notes

  • Soaking wooden skewers prevents them from burning on the grill.
  • Use an instant-read thermometer to ensure chicken is fully cooked to 165°F for safety.
  • Marinate up to 2 hours for deeper flavor but avoid longer to prevent texture changes.
  • Lemon juice is optional but adds a nice tangy brightness to the marinade.
  • These skewers pair well with fresh salads, grilled vegetables, or rice pilaf.
