Scale
Main Ingredients
- 12 frozen potstickers (vegetarian or homemade)
- 6 cups chicken or vegetable broth
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 tablespoon grated fresh ginger
- 2 cloves garlic, minced
- 3 green onions, sliced
- 1 cup sliced mushrooms (optional)
- 1 cup spinach or bok choy, chopped (optional)
- 1 teaspoon rice vinegar (optional)
- Salt and pepper, to taste
- Chili oil or red pepper flakes (optional, for spice)
Instructions
- Heat sesame oil and sauté aromatics. In a large pot, warm the sesame oil over medium heat. Add the minced garlic and grated ginger, sautéing for about one minute until fragrant and aromatic.
- Add broth and seasonings. Pour in the chicken or vegetable broth along with the soy sauce. If using, add a splash of rice vinegar for a touch of acidity. Bring the mixture to a simmer and let cook for 5 to 10 minutes to allow the flavors to meld.
- Cook potstickers in broth. Add the frozen potstickers directly to the simmering broth. Allow them to cook for 5 to 7 minutes, until they are heated through and have absorbed the broth’s flavors.
- Add optional vegetables. During the last few minutes of cooking, stir in the sliced mushrooms and/or chopped spinach or bok choy. This ensures the vegetables become tender while retaining a vibrant color.
- Season the soup. Taste and season with salt, pepper, and chili oil or red pepper flakes for a spicy kick if desired. Stir well and remove the pot from heat.
- Serve and garnish. Ladle the soup into bowls, making sure each serving contains broth, potstickers, and vegetables. Garnish with freshly sliced green onions and an extra drizzle of sesame oil if preferred for enhanced aroma and flavor.
Notes
- You can use either vegetarian or meat-filled frozen potstickers based on your preference.
- Adjust the amount of soy sauce and salt to taste, especially if your broth is already salted.
- Adding rice vinegar is optional but adds a nice tangy brightness to the soup.
- If you prefer spicier soup, increase the chili oil or red pepper flakes cautiously.
- For a gluten-free option, ensure your potstickers, soy sauce, and broth are gluten-free.
- This soup can be customized with other vegetables such as shredded carrots or napa cabbage for more texture.
- Leftover soup can be stored in an airtight container in the refrigerator for up to 2 days.
