Description

This Pesto Salmon Recipe is a quick and flavorful dish featuring tender salmon filets topped with vibrant basil pesto and a crispy parmesan-panko crust. Perfectly baked in just 20 minutes, it’s an elegant yet easy meal ideal for weeknight dinners or special occasions.

Ingredients

Scale

Salmon and Seasoning

  • 4 salmon filets (about 6 oz each, skin on)
  • 2 teaspoons kosher salt
  • ½ teaspoon black pepper
  • Zest of one lemon

Pesto Topping

  • ¼ cup basil pesto

Crust

  • 4 tablespoons grated parmesan cheese
  • ¼ cup panko breadcrumbs

Other

  • 3 tablespoons olive oil, divided

Instructions

  1. Preheat Oven and Prepare Pan: Preheat your oven to 375°F (190°C). Line a large baking sheet with aluminum foil and drizzle with 1 tablespoon of olive oil to prevent sticking and add flavor.
  2. Prepare the Salmon: Pat each salmon filet dry using a paper towel. Place the filets skin side down on the prepared baking sheet. In a small bowl, mix together the kosher salt, black pepper, and lemon zest. Evenly sprinkle this seasoning mixture over the tops of the salmon filets.
  3. Add the Pesto: Spoon the basil pesto onto the tops of the salmon filets, then use the back of the spoon to spread it evenly to the edges for maximum coverage and flavor.
  4. Make the Parmesan-Panko Crust: In another small bowl, combine the grated parmesan cheese and panko breadcrumbs, mixing well. Sprinkle this mixture evenly over the pesto-topped salmon filets. Finish by drizzling each salmon filet with the remaining 2 tablespoons of olive oil.
  5. Bake: Place the baking sheet in the preheated oven and bake the salmon for 12 to 15 minutes, or until the crust is golden brown and the fish is flaky and cooked through. If using a probe thermometer, the internal temperature should reach 145°F (63°C).
  6. Rest and Serve: Remove the baking sheet from the oven and let the salmon rest for 1 to 2 minutes before serving. This allows the juices to redistribute, ensuring moist and flavorful salmon.

Notes

  • Be careful not to overcook the salmon; it should be flaky but still moist.
  • You can prepare the pesto and breadcrumb mixture ahead of time to save time.
  • For extra crispiness, broil the salmon for 1-2 minutes at the end of baking, watching closely to prevent burning.
  • Fresh homemade basil pesto will enhance the flavor but store-bought works well too.
  • Serving with a fresh green salad or roasted vegetables makes a complete meal.
