Description

Instructions

  1. Prepare the Pan: Line an 8×8-inch baking pan with parchment paper, leaving some overhang.
  2. Melt Peanut Butter and Honey: In a medium saucepan over low heat, stir together the peanut butter and honey until smooth and warm. Remove from heat and stir in the vanilla extract and salt.
  3. Mix Dry Ingredients: In a large bowl, combine the oats, almonds, sunflower seeds, and dried cranberries.
  4. Combine Wet and Dry Ingredients: Pour the warm peanut butter mixture over the dry ingredients and stir until evenly coated. Let cool slightly, then fold in the mini chocolate chips.
  5. Press into Pan: Press the mixture firmly into the prepared pan. Chill in the refrigerator for at least 1 hour, or until firm.
  6. Slice and Serve: Lift out using the parchment paper, then cut into bars.
