Ingredients
Scale
Brownie Batter
- 2 oz unsweetened chocolate, melted
- 1/3 cup canola oil
- 2 eggs
- 1 cup sugar
- 3/4 cup flour
- 1/2 tsp baking powder
- 1/2 tsp salt
Toppings and Fillings
- 1 cup chocolate chips (semi-sweet or milk chocolate)
- 1 cup chopped peanut butter cups
- 1 bag peanut butter cups, unwrapped (approx. 10-12 pieces)
Instructions
- Preheat and Prepare Pan: Preheat your oven to 350°F (175°C). Spray an 8-inch baking dish with non-stick spray or line it with foil or parchment paper for easy removal.
- Mix Chocolate and Oil: In a mixing bowl, combine the melted unsweetened chocolate and canola oil, stirring until smooth and well blended.
- Add Eggs and Sugar: Beat in the eggs one at a time, then stir in the sugar until the mixture is combined.
- Incorporate Dry Ingredients: Add the flour, baking powder, and salt to the wet ingredients and mix until just combined, being careful not to overmix.
- Layer the Batter and Peanut Butter Cups: Spread half of the brownie batter evenly into the prepared baking dish. Arrange unwrapped peanut butter cups in a single layer on top of the batter.
- Cover with Remaining Batter: Pour the remaining brownie batter over the peanut butter cups, smoothing it evenly over the top.
- Bake the Brownies: Place the baking dish in the oven and bake for 20-25 minutes, or until a toothpick inserted near the center comes out mostly clean with only a few moist crumbs.
- Add Chocolate Chips and Melt: Immediately after removing the brownies from the oven, sprinkle the chocolate chips evenly over the top. Cover the dish loosely with foil and let it sit for 10 minutes to allow the chocolate chips to melt.
- Spread Melted Chocolate and Garnish: Using a spatula, spread the melted chocolate chips evenly across the brownie surface. Sprinkle the chopped peanut butter cups over the melted chocolate for added texture and flavor.
- Cool and Serve: Allow the brownies to cool completely in the pan before slicing into squares and serving to achieve clean cuts and the best texture.
Notes
- Ensure not to overbake the brownies to keep them fudgy and moist; check at 20 minutes and adjust accordingly.
- For easier removal, lining the baking dish with parchment paper is recommended.
- You can substitute canola oil with melted butter for a richer flavor if preferred.
- Store brownies in an airtight container at room temperature for up to 3 days or refrigerate for up to a week.
- To make cutting easier, refrigerate the brownies for 30 minutes before slicing.
