Ingredients
Scale
Brownie Batter
- 1 box family-size brownie mix
- 2 large eggs
- 1/3 cup vegetable oil
- 1/4 cup water (or coffee for extra flavor)
Cream Cheese Filling
- 8 oz cream cheese, softened
- 1 cup powdered sugar
- Red gel food coloring
- Blue gel food coloring
Optional Decoration
- Sprinkles for decoration
Instructions
- Prepare the brownie batter: Preheat your oven to 350°F (175°C). In a mixing bowl, combine the brownie mix, eggs, vegetable oil, and water or coffee. Stir until the batter is smooth and well combined.
- Bake the brownies: Pour the batter into a greased baking pan, spreading it evenly. Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean. Remove from oven and let the brownies cool completely.
- Make the cream cheese filling: In a separate bowl, beat the softened cream cheese with the powdered sugar until smooth and creamy. Divide the filling into two portions and tint one with red gel food coloring and the other with blue, mixing well for vibrant colors.
- Cut and assemble brownie bombs: Once the brownies are cool, use a small round cookie cutter to cut out circles. Place a dollop of the colored cream cheese filling on one brownie circle, then gently press another brownie circle on top to create a sandwich.
- Decorate and chill: Roll the assembled brownie bombs in sprinkles if desired for extra decoration. Place them in the refrigerator and chill for at least 30 minutes before serving to let the filling set.
Notes
- You can substitute water with coffee in the brownie batter for a richer chocolate flavor.
- Use gel food coloring to avoid altering the filling’s consistency.
- Make sure brownies are fully cooled before cutting to prevent crumbling.
- Refrigerate for longer if you want firmer filling consistency.
- These can be stored in an airtight container in the refrigerator for up to 5 days.
