Description

A delicious copycat version of Outback Steakhouse’s Alice Springs Chicken featuring juicy seasoned grilled chicken breasts topped with crispy bacon, sautéed mushrooms, melted cheddar jack cheese, and a drizzle of honey mustard dressing. Ready in just 30 minutes, this dish combines smoky, savory, and tangy flavors for a perfect hearty meal.

Ingredients

Scale

Chicken

  • 4 boneless skinless chicken breasts, pounded to an even thickness
  • 2½ Tbsp Outback Steak Seasoning

Bacon and Mushrooms

  • 8 slices thick cut bacon
  • 1 cup sliced fresh mushrooms

Toppings

  • 2 cups shredded cheddar jack cheese
  • ½ cup honey mustard dressing

Instructions

  1. Season the Chicken: Generously coat both sides of the pounded chicken breasts with Outback Steak Seasoning, ensuring an even and flavorful layer.
  2. Cook the Bacon: In a large skillet over medium-high heat, cook the bacon slices until crisp. Remove the bacon and set aside, reserving 2 tablespoons of the rendered bacon fat in the pan.
  3. Sauté the Mushrooms: Using the reserved bacon fat, sauté the sliced mushrooms over medium heat until they are softened and flavorful. Remove from heat and set aside.
  4. Grill the Chicken: Preheat your grill to medium-high heat. Grill the seasoned chicken breasts for 12-15 minutes, turning occasionally, until fully cooked through and the internal temperature reaches 165°F (74°C).
  5. Broil with Toppings: Preheat your oven broiler. Place the grilled chicken breasts on a rimmed baking sheet. Spread 1 to 2 tablespoons of honey mustard dressing on each piece of chicken. Top each with cooked bacon, sautéed mushrooms, and shredded cheddar jack cheese. Broil until the cheese is melted and bubbly, about 2-4 minutes. Serve immediately.

Notes

  • Pound chicken breasts to even thickness to ensure they cook evenly on the grill.
  • Use thick-cut bacon for better texture and flavor.
  • If you don’t have Outback Steak Seasoning, a mixture of paprika, garlic powder, onion powder, salt, black pepper, and dried herbs works well.
  • Watch the chicken carefully while broiling to prevent burning the cheese.
  • Serve with a side of steamed vegetables or a fresh salad for a complete meal.
