Instructions

  1. Preheat and Prepare Pan: Preheat your oven to 375°F (190°C). Grease a 12-cup muffin tin or line it with parchment strips to prevent sticking.
  2. Make the Batter Base: In a medium saucepan set over medium heat, combine the unsalted butter and whole milk. Stir continuously until the butter melts and the mixture just begins to simmer.
  3. Add Dry Ingredients: Remove the saucepan from heat and quickly add the all-purpose flour, granulated sugar, and salt all at once. Stir vigorously until the mixture forms a ball and pulls away from the sides of the pan, ensuring a smooth dough.
  4. Cool and Add Eggs: Allow the dough to cool for 5–10 minutes to prevent cooking the eggs. Then, beat in the eggs one at a time, mixing thoroughly after each addition until the batter becomes smooth, glossy, and thick, similar to pudding.
  5. Fill Muffin Cups: Spoon the batter evenly into the prepared muffin cups, filling each about three-quarters full to allow room for puffing.
  6. Bake: Place the muffin tin in the oven and bake for 30–35 minutes. Bake until the puffs are well-risen, golden brown, and crisp on the outside. Avoid opening the oven door during baking to prevent the puffs from collapsing.
  7. Cool and Serve: Let the puffs cool slightly in the pan before removing. Optionally dust with powdered sugar and serve warm with jam, honey, or chocolate drizzle.
