Scale
Main Ingredients
- 2 cups old-fashioned rolled oats
- 1 cup natural peanut butter
- 1/2 cup honey or maple syrup
- 1/4 cup coconut oil, melted
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/2 cup mini chocolate chips (optional)
Instructions
- Prepare the muffin tin: Line a 12-cup muffin tin with paper liners or lightly grease it with nonstick spray to prevent sticking.
- Mix wet ingredients: In a large bowl, combine the natural peanut butter, honey or maple syrup, melted coconut oil, vanilla extract, and salt. Stir thoroughly until the mixture is smooth and homogenous.
- Add oats: Add the rolled oats to the wet mixture and stir until the oats are completely coated with the peanut butter mixture.
- Fold in chocolate chips: If using, gently fold in the mini chocolate chips to evenly distribute them without breaking.
- Fill the muffin cups: Scoop the mixture evenly into the prepared muffin cups and press down firmly with the back of a spoon to compact the mixture tightly.
- Chill to set: Refrigerate the muffin tin for at least 1 to 2 hours or until the cups are firm and hold their shape.
- Store and serve: Once set, remove the cups from the muffin tin and store them in an airtight container in the refrigerator to maintain their consistency. Serve chilled for best texture.
Notes
- Use creamy peanut butter for a smoother texture or crunchy peanut butter for added texture.
- You can substitute almond butter or sunflower seed butter for peanut butter if needed.
- Keep the oat cups refrigerated to maintain firmness and freshness.
