Description

Delight in this no-bake minted Earl Grey slice, a luscious dessert combining the aromatic flavors of Earl Grey tea and refreshing peppermint with a crunchy biscuit base and a smooth dark chocolate topping. Perfectly chilled and easy to prepare, this British-inspired treat makes for an elegant and delicious snack or dessert.

Ingredients

Scale

Base

  • 200g (about 7 oz) plain tea biscuits or digestive biscuits, crushed
  • 100g (1/2 cup) unsalted butter
  • 1/3 cup sweetened condensed milk
  • 2 tablespoons cocoa powder
  • 2 Earl Grey tea bags (leaves removed)
  • 1/2 teaspoon peppermint extract
  • 1/4 teaspoon vanilla extract
  • Pinch of salt

Topping

  • 180g (about 6 oz) dark chocolate, chopped
  • 1 tablespoon butter or cream
  • Crushed peppermint candies or extra tea leaves (optional, for garnish)

Instructions

  1. Prepare the pan: Line an 8×8-inch pan with parchment paper, leaving some overhang on the sides to enable easy removal of the slice later.
  2. Make the base mixture: In a saucepan over low heat, combine the unsalted butter, sweetened condensed milk, cocoa powder, peppermint extract, vanilla extract, salt, and Earl Grey tea leaves. Stir constantly until the mixture is smooth and well combined, but do not allow it to boil.
  3. Add crushed biscuits: Remove the saucepan from the heat and thoroughly mix in the crushed tea biscuits until all pieces are evenly coated with the chocolate tea mixture.
  4. Form the base layer: Press the biscuit mixture firmly and evenly into the prepared pan, smoothing out the surface for an even layer.
  5. Prepare the topping: In a heatproof bowl, melt the dark chocolate together with the butter or cream, using either a microwave in short bursts or a double boiler method until smooth and glossy.
  6. Assemble the slice: Pour the melted dark chocolate topping over the biscuit base and spread it evenly with a spatula.
  7. Garnish and chill: Sprinkle crushed peppermint candies or dust a few extra tea leaves on top if desired. Place the slice in the fridge and chill for at least 2 hours or until firmly set.
  8. Serve: Once set, lift the slice out of the pan using the parchment overhang, cut into bars (about 16 slices), and serve chilled or at room temperature.

Notes

  • Use high-quality Earl Grey tea for a richer and more pronounced tea flavor in the slice.
  • For a softer base texture, graham crackers can be substituted for the tea biscuits.
  • This slice keeps well in the refrigerator for up to one week and can also be frozen for longer storage.
