Pie Crust
- 2 refrigerated pie crusts (or homemade)
Apple Filling
- 2 medium apples (peeled, cored, and finely diced)
- 2 tablespoons granulated sugar
- 2 tablespoons brown sugar
- 1 teaspoon ground cinnamon
- ¼ teaspoon ground nutmeg
- 1 tablespoon all-purpose flour
- 1 teaspoon lemon juice
- 1 tablespoon unsalted butter (cut into tiny pieces)
Topping
- 1 egg (beaten, for egg wash)
- Coarse sugar for sprinkling (optional)
Instructions
- Preheat and Prepare Muffin Tin: Preheat your oven to 375°F (190°C) and lightly grease a muffin tin to prevent sticking.
- Cut Pie Crust Circles: Roll out the pie crusts and cut out 12 circles approximately 3.5 to 4 inches in diameter, large enough to line each muffin cup. Press each circle gently into the bottom and up the sides of the muffin tin cups.
- Make Apple Filling: In a medium bowl, combine the finely diced apples with granulated sugar, brown sugar, ground cinnamon, ground nutmeg, all-purpose flour, and lemon juice. Mix well to evenly coat the apples with the sweet and spiced mixture.
- Fill Crusts: Spoon the apple filling into each prepared pie crust, filling each to the top. Dot a few tiny pieces of unsalted butter on top of the apple filling in each cup.
- Top Pies: Cut smaller shapes from the remaining pie crust—such as circles, strips, or lattice tops—and place these over the filling. Press edges to seal and crimp with a fork for a decorative edge if desired.
- Apply Egg Wash and Sugar: Brush the tops of each mini pie with beaten egg to give them a golden shine when baked. Sprinkle with coarse sugar for added crunch and sweetness, if using.
- Bake: Place the muffin tin in the preheated oven and bake for 22 to 25 minutes, or until the pies are golden brown and the filling is bubbly.
- Cool: Let the mini apple pies cool in the muffin tin for 10 minutes before carefully removing them. Transfer the pies to a wire rack to cool completely before serving.
