Mexican Chicken Pinwheels are a delicious and easy-to-make appetizer featuring a creamy mixture of cream cheese, sour cream, taco seasoning, shredded chicken, corn, and fresh cilantro rolled inside soft flour tortillas. Instructions
- Prepare the filling mixture: In a large bowl, combine the cream cheese, sour cream, taco seasoning, and shredded Colby cheese. Mix well until smooth and evenly blended.
- Add chicken and vegetables: Stir in the shredded cooked chicken, corn kernels, chopped cilantro, and mix thoroughly. Taste the mixture and add salt as needed to enhance the flavor.
- Spread on tortillas: Place one flour tortilla on a clean cutting board and evenly spread approximately 1/6 of the filling mixture over the entire surface of the tortilla.
- Roll the tortilla: Roll the tortilla up tightly from one end to the other, making sure the filling stays evenly distributed. Place the rolled tortilla seam side down on a plate and cover with plastic wrap.
- Repeat for remaining tortillas: Repeat the spreading and rolling process for the remaining four tortillas until all the filling is used.
- Refrigerate: Chill the rolled tortillas in the refrigerator for at least 2 hours or overnight to allow the filling to set and flavors to meld.
- Slice and serve: Remove the pinwheels from the fridge, slice each roll into 1-inch thick pieces, and arrange on a serving platter. Serve with guacamole, pico de gallo, salsa, and extra sour cream if desired.
