Ingredients
Scale
Mango and Fruit
- 2 ripe mangoes (peeled and diced)
- 1 tablespoon lemon juice
- Fresh mango slices for garnish
- Mint leaves for garnish
Cheesecake Mixture
- 16 ounces (2 packages) cream cheese, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup heavy cream
- 1 cup mango puree (optional, for extra mango flavor)
Base Layer
- 1 package (10-12 ounces) ladyfinger cookies or sponge cake, cut into cubes
Additional Garnish
- Whipped cream for garnish
Instructions
- Prepare the Mango Cheesecake Layer: In a blender or food processor, puree one of the diced mangoes with lemon juice until smooth and set aside. In a large mixing bowl, beat the softened cream cheese until smooth and creamy. Add the powdered sugar and vanilla extract, beating until well combined. In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until smooth. Fold in the mango puree until evenly distributed. Reserve some diced mango for garnish.
- Assemble the Trifle: In a trifle dish or individual serving glasses, layer the bottom with ladyfinger cookies or sponge cake cubes. Drizzle some mango puree, if using, over the cookies or cake to moisten them slightly. Spoon a layer of the mango cheesecake mixture over the cookies or cake, spreading it evenly. Repeat the layering process until the dish or glasses are full, finishing with a layer of the mango cheesecake mixture.
- Decorate and Chill: Garnish the top of the trifle with fresh mango slices, reserved diced mango, whipped cream, and mint leaves for a fresh and vibrant finish. Cover the trifle dish or glasses with plastic wrap and refrigerate for at least 4 hours, preferably overnight, allowing the flavors to meld and the dessert to set properly.
- Serve: Before serving, add additional mango slices, whipped cream, and mint leaves if desired for presentation. Enjoy this refreshing and delightful mango cheesecake trifle with friends and family!
Notes
- Use ripe mangoes for the best flavor and natural sweetness.
- Ladyfinger cookies or sponge cake can be substituted based on preference.
- The mango puree is optional but enhances the mango flavor and moistness of the layers.
- Allowing the trifle to chill overnight improves texture and flavor melding.
- This dessert is best served chilled and consumed within 2 days for freshness.
- For a lighter version, you can use reduced-fat cream cheese and heavy cream substitutes but the texture might differ slightly.
