Description

Lunch Lady Peanut Butter Bars are a nostalgic, frosted peanut butter dessert that combines a soft, oat-studded base with a smooth peanut butter frosting. These bars are easy to bake, making them a perfect sweet treat for school lunches or a cozy afternoon snack.

Ingredients

Scale

For the Bars

  • 1 cup unsalted butter (softened)
  • 1 cup granulated sugar
  • 1 cup packed light brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup creamy peanut butter (divided)
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups quick oats

For the Frosting

  • 2 cups powdered sugar
  • 1/4 cup milk
  • 1/2 teaspoon vanilla extract
  • 1 tablespoon peanut butter (optional)

Instructions

  1. Preheat and Prepare: Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish or line it with parchment paper to prevent sticking.
  2. Cream Butter and Sugars: In a large bowl, cream together softened butter, granulated sugar, and light brown sugar until the mixture becomes light and fluffy. This creates a smooth base for the bars.
  3. Add Eggs and Peanut Butter: Beat in the eggs and 1 teaspoon of vanilla extract. Then mix in 3/4 cup of the creamy peanut butter until the batter is smooth and well combined.
  4. Combine Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, baking soda, salt, and quick oats. Gradually add this dry mix to the wet ingredients, stirring until fully incorporated.
  5. Spread and Bake: Evenly spread the batter into the prepared baking dish. Bake in the preheated oven for 22 to 25 minutes, or until the bars are golden brown and set in the center.
  6. Peanut Butter Layer: Remove the bars from the oven and while still warm, gently spread the remaining 1/4 cup of peanut butter over the top to create a thin, flavorful layer. Allow the bars to cool completely.
  7. Prepare Frosting: In a bowl, beat together powdered sugar, milk, 1/2 teaspoon vanilla extract, and an optional tablespoon of peanut butter until smooth and spreadable.
  8. Frost the Bars: Spread the frosting evenly over the cooled bars. Let the frosting set completely before cutting the bars into 24 squares for serving.

Notes

  • Bars can be stored in an airtight container at room temperature for up to 4 days.
  • For a firmer texture, refrigerate the bars before serving.
  • Use creamy peanut butter for a smoother texture; chunky peanut butter is not recommended for this recipe.
  • Ensure bars are completely cooled before frosting to prevent melting.
