Ingredients
Scale
Base Ingredients
- 1 cup lentils
- 2 cups vegetable broth
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon ginger, grated
- 1 can coconut milk (about 13.5 oz)
- 1 cup spinach
- Salt to taste
Spices & Seasonings
- 2 tablespoons curry powder
- 1 teaspoon cumin
- 1 teaspoon turmeric
- 1 tablespoon olive oil
Instructions
- Rinse Lentils: Rinse the lentils thoroughly under cold water to remove any debris and excess starch.
- Heat Oil and Sauté Onion: In a pot, heat the olive oil over medium heat, then add the chopped onion. Sauté until the onion becomes translucent, approximately 5 minutes.
- Add Garlic and Ginger: Add the minced garlic and grated ginger to the pot and sauté for another minute, releasing their aromatic flavors.
- Add Spices: Stir in the curry powder, cumin, and turmeric, cooking briefly to toast the spices and deepen their flavors, about 1 minute.
- Add Lentils and Broth: Add the rinsed lentils and vegetable broth to the pot. Bring the mixture to a boil.
- Simmer Lentils: Lower the heat and let the lentils simmer uncovered for 25 to 30 minutes, or until they are tender and have absorbed most of the liquid.
- Add Coconut Milk and Spinach: Stir in the coconut milk and spinach. Cook for an additional 5 minutes until the spinach wilts and the curry is creamy and well combined.
- Season and Serve: Season with salt to taste. Serve the lentil curry warm in bowls for a comforting meal.
Notes
- For a thicker curry, simmer uncovered for longer to reduce liquid further.
- Adjust spices according to your heat preference; add chili powder or fresh chili for extra spice.
- Use red or green lentils depending on your texture preference; red lentils will cook faster and become softer.
- This recipe is vegan and can be served with rice or bread for a complete meal.
