This Lazy Chicken Parmesan Grilled Cheese combines the classic flavors of chicken Parmesan with the comforting, melty goodness of a grilled cheese sandwich. Using cooked chicken simmered in marinara sauce and Italian seasonings, layered with mozzarella and Parmesan cheeses between slices of buttery Italian or sourdough bread, it makes for a quick and satisfying main course that’s perfect for a busy weeknight meal.

Chicken Mixture
- 2 cups cooked chicken (shredded or chopped)
- 1 cup marinara sauce
- 1/2 teaspoon Italian seasoning
- 1/4 teaspoon garlic powder
- 1/4 teaspoon black pepper
- 1/2 cup grated Parmesan cheese
Cheese and Bread
- 1 cup shredded mozzarella cheese
- 8 slices Italian or sourdough bread
- 2 tablespoons butter (softened)
Optional Garnish
- Fresh basil leaves for garnish
Instructions
- Heat the chicken mixture: In a small saucepan over medium heat, combine the cooked chicken, marinara sauce, Italian seasoning, garlic powder, and black pepper. Stir occasionally and heat until the mixture is warmed through and fragrant, about 3-5 minutes.
- Prepare the bread slices: Butter one side of each slice of bread evenly. Place 4 slices of bread buttered side down on a clean working surface to start assembling the sandwiches.
- Assemble sandwiches: On each of the 4 bread slices, add a layer of shredded mozzarella cheese, then top with a scoop of the warm chicken and marinara mixture. Sprinkle Parmesan cheese evenly over the chicken, then add another layer of mozzarella cheese on top.
- Top the sandwiches: Place the remaining 4 slices of bread on top of each sandwich, buttered side up, completing the sandwich assembly.
- Grill the sandwiches: Heat a skillet or griddle over medium heat. Once hot, place the sandwiches onto the skillet. Cook for 3 to 4 minutes per side, pressing gently with a spatula to help the sandwich cook evenly and the cheese to melt, until the bread is golden brown and crispy.
- Serve and garnish: Remove the sandwiches from the skillet, slice them in half if desired, and garnish with fresh basil leaves for a pop of color and flavor. Serve hot.
