Description

Italian Love Cake is a rich and indulgent dessert featuring a moist chocolate cake base topped with a creamy ricotta cheese layer, finished with a luscious chocolate pudding and whipped topping frosting. This delectable cake combines the best of traditional Italian flavors with easy-to-follow steps, perfect for any special occasion or family gathering.

Ingredients

Scale

Cake

  • 1 box chocolate cake mix (plus ingredients called for on the box)

Ricotta Layer

  • 2 pounds ricotta cheese
  • 4 large eggs
  • ¾ cup granulated sugar
  • 1 teaspoon vanilla extract

Frosting

  • 1 (8 oz) container whipped topping, thawed
  • 1 (3.4 oz) box instant chocolate pudding mix
  • 1 cup cold milk

Instructions

  1. Prepare the Cake Batter: Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish. Prepare the chocolate cake batter according to the instructions on the box, ensuring all ingredients are well combined and smooth. Pour the batter evenly into the greased baking dish.
  2. Make the Ricotta Layer: In a large bowl, combine the ricotta cheese, eggs, granulated sugar, and vanilla extract. Mix thoroughly until the mixture is smooth, creamy, and well blended. Carefully spoon the ricotta mixture over the chocolate cake batter in the baking dish, spreading it evenly to cover the batter completely.
  3. Bake the Cake: Place the baking dish in the preheated oven and bake for 50 to 60 minutes. To check for doneness, insert a toothpick into the center of the cake; it should come out clean. Once baked, remove the cake from the oven and allow it to cool completely at room temperature.
  4. Prepare the Frosting: In a medium-sized bowl, whisk together the instant chocolate pudding mix and cold milk until the mixture thickens. Gently fold in the thawed whipped topping until the frosting is smooth and creamy.
  5. Frost and Serve: Spread the prepared frosting evenly over the cooled cake surface. Cover the cake and refrigerate for at least 2 hours to allow the flavors to meld and the frosting to set. Serve chilled for best taste and texture.

Notes

  • Ensure the cake is completely cooled before frosting to prevent the frosting from melting.
  • Use whole milk for the pudding mix for best results, but 2% milk can be used as a lighter option.
  • Leftovers should be stored covered in the refrigerator and consumed within 3-4 days.
  • This cake freezes well; wrap tightly and freeze for up to 2 months. Thaw overnight in the refrigerator before serving.
  • For a dairy-free version, substitute ricotta and whipped topping with suitable dairy-free alternatives.
