Instructions

  1. Sauté Aromatics: Heat the olive oil in a large skillet or Dutch oven over medium heat. Add the sliced onion and sauté for 4–5 minutes until softened and translucent. Stir in the minced garlic and cook for an additional 1 minute until fragrant.
  2. Add Vegetables: Add the trimmed green beans and cubed Yukon gold potatoes to the skillet. Stir well to combine the vegetables with the sautéed aromatics.
  3. Add Liquids and Seasonings: Pour in the diced tomatoes with their juices and the water or vegetable broth. Stir in the dried oregano, crushed red pepper flakes if using, salt, and black pepper evenly throughout the mixture.
  4. Braise Vegetables: Bring the mixture to a boil over medium-high heat. Once boiling, reduce the heat to low and cover the skillet with a lid. Let it simmer gently for 25–30 minutes, or until the potatoes are fork-tender and the green beans have softened and absorbed the flavors.
