Description

This irresistible Korean Egg Drop Sandwich combines fluffy, creamy scrambled eggs with crispy ham, melted cheese, and a spicy-sweet sriracha mayo sauce, all sandwiched between perfectly toasted bread. A quick and flavorful breakfast or snack you’ll crave daily, complete with optional avocado slices for extra creaminess and freshness.

Ingredients

Scale

Egg Mixture

  • 4 large eggs
  • 1.5 tablespoons heavy cream
  • 1 teaspoon sea salt
  • 1 tablespoon butter (for cooking eggs)

Sandwich Components

  • 4 slices bread (your favorite type)
  • 4 slices ham
  • 2 slices cheese (cheddar or American)
  • 0.5 tablespoon butter (for toasting bread)

Sauces

  • 1.5 tablespoons sriracha
  • 1.5 tablespoons mayonnaise
  • 1 tablespoon sweetened condensed milk
  • 2 tablespoons mayonnaise (for drizzling)

Garnishes

  • Fresh parsley or chives
  • Avocado slices (optional)

Instructions

  1. Prepare the sauce: In a small bowl, combine sriracha, 1.5 tablespoons mayonnaise, and sweetened condensed milk. Mix well and set aside for drizzling later.
  2. Toast the bread: Heat a pan over medium heat and melt half a tablespoon of butter. Toast the bread slices until they turn a golden brown color. Remove and set aside.
  3. Fry the ham: Increase the heat to medium-high. Add the ham slices to the pan and fry for 2-3 minutes until crispy. Remove from the pan and set aside.
  4. Whisk the eggs: Crack the eggs into a bowl, add heavy cream and sea salt, then whisk vigorously until the mixture is fluffy and well combined.
  5. Cook the scrambled eggs: Reduce the pan heat to medium-low and add the remaining butter. Pour in the egg mixture and cook gently, scrambling slowly until the eggs are set but still soft and fluffy, about 2-3 minutes. Remove from heat.
  6. Assemble the sandwich: Spread the prepared sriracha mayo sauce on the inside of the toasted bread slices. Layer cheese slices, fluffy scrambled eggs, and crispy ham onto one slice of bread. Top with the other slice.
  7. Finish and garnish: Drizzle the additional 2 tablespoons of mayonnaise over the sandwich, sprinkle chopped parsley or chives on top, and add avocado slices if desired. Serve immediately.

Notes

  • Use fresh eggs for the best fluffy texture.
  • Adjust the amount of sriracha to your spice preference.
  • Avocado slices are optional but add a creamy texture that complements the savory sandwich.
  • For a lighter option, substitute heavy cream with milk or omit it entirely.
  • Use a non-stick pan for easy cooking and minimal butter usage.
