Ingredients
Scale
Pancakes
- 1 cup all-purpose flour
- 1 tablespoon sugar
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 3/4 cup milk
- 1 large egg
- 1 tablespoon melted butter
- 2 tablespoons maple syrup
Fillings and Cooking
- 4 slices American cheese
- 4 cooked sausage patties or strips of bacon
- 4 eggs (cooked to preference)
- butter or oil for cooking
Instructions
- Make the pancake batter: In a mixing bowl, whisk together the flour, sugar, baking powder, and salt. In a separate bowl, combine the milk, egg, melted butter, and maple syrup. Pour the wet ingredients into the dry and mix until just combined, ensuring not to overmix.
- Cook the mini pancakes: Heat a nonstick skillet or griddle over medium heat and lightly grease with butter or oil. Pour small circles of batter about 3 inches wide onto the skillet. Cook for 1–2 minutes until bubbles form on the surface, then carefully flip and cook another 1–2 minutes until golden brown on both sides. Repeat until you have 8 mini pancakes.
- Prepare the fillings: Cook the sausage patties or bacon in the same skillet until browned and cooked through, then set aside. In the same pan, cook the eggs according to your preference—fried or scrambled work well for this sandwich.
- Assemble the sandwiches: Start by layering one mini pancake as the base, then add a slice of American cheese followed by the cooked egg, sausage or bacon, and finally top with a second mini pancake. Serve immediately while warm for the best flavor and texture.
Notes
- For a stronger maple flavor, add a few drops of maple extract to the pancake batter.
- These sandwiches can be made ahead and frozen; reheat in the microwave or toaster oven before serving for convenience.
- You can swap sausage patties with bacon or other breakfast meats based on preference.
- Use nonstick spray or butter liberally to prevent sticking when cooking pancakes and eggs.
