- ¼ cup pumpkin seeds
- 2 tbsp chia seeds
- 2 tbsp flaxseeds
- ½ cup dried cranberries (or raisins)
- ½ tsp cinnamon
- Pinch of salt

- ¼ cup natural peanut butter or almond butter
- ¼ cup honey or maple syrup
- 1 tsp vanilla extract
Instructions
- Preheat Oven: Preheat your oven to 325°F (160°C) and line a baking sheet with parchment paper to prevent sticking.
- Combine Dry Ingredients: In a large mixing bowl, mix together the rolled oats, chopped mixed nuts, pumpkin seeds, chia seeds, flaxseeds, dried cranberries, cinnamon, and salt, ensuring even distribution of all components.
- Melt Wet Ingredients: Over low heat in a small saucepan, gently melt together the peanut butter (or almond butter) and honey (or maple syrup) until the mixture is smooth and well blended. Remove from heat and stir in vanilla extract for added flavor.
- Mix Wet and Dry: Pour the melted peanut butter and honey mixture over the dry ingredients and stir thoroughly so that all the dry ingredients are coated evenly with the wet mixture.
- Form Cookies: Using a cookie scoop or spoon, drop spoonfuls of the mixture onto the prepared baking sheet. Gently press each mound to flatten into round cookie shapes for even baking.
- Bake: Place the baking sheet in the oven and bake the cookies for 12–15 minutes or until they turn golden and feel firm to the touch.
- Cool: Remove from the oven and allow the cookies to cool completely on a wire rack so they set properly and achieve the best texture.
