Scale
Main Ingredients
- 1 pound ground turkey
- 2 medium sweet potatoes, peeled and diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 cup corn (fresh or frozen)
- 1 can (15 oz) black beans, drained and rinsed
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 cup shredded cheese (cheddar or your choice)
- 1/4 cup fresh cilantro, chopped (for garnish)
Instructions
- Preheat Oven: Preheat your oven to 375°F (190°C) to prepare for baking the casserole later.
- Cook Ground Turkey: In a large skillet over medium heat, cook the ground turkey until browned, about 5-7 minutes. Break it apart with a spoon while cooking and drain any excess fat once done.
- Sauté Onion and Garlic: Add the chopped onion and minced garlic to the skillet with the cooked turkey. Cook for 3-4 minutes until the onion becomes translucent and fragrant.
- Add Vegetables and Seasonings: Stir in the diced sweet potatoes, corn, black beans, cumin, paprika, salt, and pepper. Cook the mixture for 10 minutes, stirring occasionally until the sweet potatoes start to soften.
- Assemble Casserole: Transfer the entire mixture to a greased 9×13-inch baking dish. Spread it evenly and evenly sprinkle the shredded cheese on top.
- Bake: Bake in the preheated oven for 25-30 minutes, or until the sweet potatoes are fully cooked and the cheese is melted, bubbly, and lightly golden.
- Garnish and Serve: Remove the casserole from the oven and let it cool for a few minutes. Garnish with freshly chopped cilantro before serving.
Notes
- You can use any cheese you prefer or a blend for different flavors.
- For extra spice, add a pinch of cayenne pepper or chili powder along with the cumin and paprika.
- Leftovers can be refrigerated for up to 3 days and reheated in the oven or microwave.
- Make sure to rinse canned black beans well to reduce sodium content.
- To make it vegetarian, substitute the ground turkey with plant-based meat alternatives or extra beans.
