  2. Prepare Marinade: In a large bowl, whisk together coconut milk, soy sauce, fish sauce, brown sugar, minced garlic, grated ginger, lime juice, curry powder, salt, black pepper, and vegetable oil to create a well-balanced marinade.
  3. Marinate Chicken: Add the chicken pieces to the bowl and toss thoroughly to coat each piece with the marinade. Cover and refrigerate for at least 1 hour, or up to 8 hours to deepen the flavors.
