- Prepare the Pineapple: Peel the pineapple carefully to remove the tough outer skin. Cut out the core, then slice the pineapple into approximately 1/2-inch thick rings. You should get about 12 rings depending on the size of the pineapple.
- Make the Glaze: In a medium mixing bowl, whisk together the brown sugar, melted salted butter, fresh lime juice, and coconut extract until fully combined and smooth. This glaze will add a sweet, citrusy, and tropical flavor to the pineapple.
