Description

These Garlic Parmesan Chicken Skewers are a flavorful and easy-to-make grilled dish featuring tender chicken cubes marinated in a zesty mixture of garlic, Parmesan cheese, herbs, and lemon juice. Perfect for a quick dinner or a summer meal, they are juicy, aromatic, and pair well with salads or rice.

Ingredients

Scale

Chicken and Marinade

  • 1.5 pounds boneless, skinless chicken breasts, cut into 1-inch cubes
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • 1 tablespoon fresh parsley, chopped
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Juice of 1 lemon

Additional

  • Wooden or metal skewers (if using wooden, soaked in water for 30 minutes)

Instructions

  1. Prepare the Marinade: In a large bowl, whisk together olive oil, minced garlic, grated Parmesan cheese, chopped fresh parsley, dried oregano, salt, black pepper, and the juice of one lemon until well combined to create a flavorful marinade.
  2. Marinate the Chicken: Add the chicken breast cubes to the marinade bowl and toss thoroughly to ensure every piece is evenly coated. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes, or up to 2 hours for deeper flavor infusion.
  3. Preheat the Grill: Preheat your grill or grill pan to medium-high heat, allowing it to get hot enough to sear the chicken properly and create grill marks.
  4. Skewer the Chicken: Thread the marinated chicken pieces onto the soaked wooden or metal skewers, distributing them evenly without overcrowding to ensure even cooking.
  5. Grill the Skewers: Place the skewers on the grill and cook for about 4 to 5 minutes on each side, turning carefully to achieve nice grill marks and ensure the chicken is fully cooked, reaching an internal temperature of 165°F (74°C).
  6. Rest and Serve: Remove the skewers from the grill and let them rest for a few minutes. Serve warm alongside a fresh side salad or over a bed of rice for a complete and satisfying meal.

Notes

  • For added flavor, sprinkle extra Parmesan cheese and fresh parsley over the cooked skewers right before serving.
  • These skewers can also be baked in an oven at 400°F (200°C) for 15-20 minutes, turning once halfway through cooking.
  • Substitute chicken thighs for juicier skewers if preferred.
  • To maintain a gluten-free dish, ensure that Parmesan cheese and seasonings do not contain additives with gluten.
