Ingredients
Scale
Meatloaf:
- 1 1/2 pounds ground chicken
- 1/2 cup breadcrumbs (plain or Italian)
- 1/2 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 egg
- 1/4 cup milk
- 1/4 cup chopped parsley
- 1 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup shredded mozzarella cheese (optional, for topping)
Optional Garlic Butter Glaze:
- 2 tablespoons melted butter
- 1 clove garlic, minced
- 1 tablespoon chopped parsley
Instructions
- Preheat the Oven: Preheat your oven to 375°F (190°C) and prepare your baking surface by lining a baking sheet with parchment paper or lightly greasing a loaf pan.
- Mix Ingredients: In a large mixing bowl, combine the ground chicken, breadcrumbs, grated Parmesan cheese, minced garlic, egg, milk, chopped parsley, onion powder, salt, and black pepper. Mix gently until just combined to avoid a dense meatloaf.
- Shape the Meatloaf: Form the mixture into a loaf shape on the prepared baking sheet or press it firmly into the loaf pan to ensure even cooking.
- Bake the Meatloaf: Place in the oven and bake for 40 to 45 minutes, or until the internal temperature reaches 165°F (74°C), indicating it is fully cooked.
- Add Mozzarella (Optional): If using mozzarella cheese, sprinkle it over the meatloaf during the last 5 minutes of baking. Switch the oven to broil briefly to melt and brown the cheese until bubbly and golden.
- Prepare Garlic Butter Glaze: While the meatloaf bakes or once it’s out of the oven, combine melted butter with minced garlic and chopped parsley.
- Glaze and Rest: Brush the garlic butter glaze over the hot meatloaf for added flavor just before serving. Let the meatloaf rest for 5 minutes to redistribute the juices and make slicing easier.
Notes
- This meatloaf pairs excellently with mashed potatoes or roasted vegetables for a complete meal.
- For added moisture and richness, you can stir in 1 to 2 tablespoons of sour cream into the meat mixture before shaping.
- Ground turkey can be used as a substitute for ground chicken if desired.
- To ensure the meatloaf doesn’t dry out, avoid overmixing the ingredients.
