Description

This stunning Galaxy Cake Roll features a vibrant, marbleized sponge cake in mesmerizing shades of black, purple, blue, and pink, swirled together to mimic a cosmic galaxy. Filled with fluffy whipped cream and decorated with edible glitter and star sprinkles, it’s a visually striking dessert perfect for space enthusiasts and special celebrations.

Ingredients

Scale

For the cake:

  • 3/4 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 4 large eggs (room temperature)
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • Gel food coloring (black, purple, blue, and pink)
  • Powdered sugar (for dusting towel)

For the filling:

  • 1 cup heavy whipping cream
  • 1/4 cup powdered sugar
  • 1/2 teaspoon vanilla extract

Optional decoration:

  • Edible glitter
  • Star-shaped sprinkles
  • Colored sugar

Instructions

  1. Preheat and prepare pan: Preheat your oven to 350°F (175°C). Line a 10×15-inch jelly roll pan with parchment paper and lightly grease it to ensure easy removal of the cake.
  2. Mix dry ingredients: In a small bowl, whisk together the all-purpose flour, baking powder, and salt until evenly combined.
  3. Beat eggs and sugar: In a large mixing bowl, beat the room temperature eggs on high speed for about 5 minutes until thick, pale, and fluffy. Gradually add sugar and vanilla extract, continuing to beat until fully incorporated.
  4. Fold in dry ingredients: Gently fold the flour mixture into the egg mixture using a spatula. Be careful not to overmix to maintain the batter’s light texture.
  5. Divide and color batter: Evenly divide the batter into 4 small bowls. Tint each portion with a different gel food coloring: black, purple, blue, and pink.
  6. Create galaxy pattern: Spoon the differently colored batters randomly over the prepared pan. Use a toothpick or skewer to gently swirl the colors to create a beautiful galaxy marble effect.
  7. Bake: Bake in the preheated oven for 10–12 minutes or until the top springs back when lightly touched, indicating the cake is done.
  8. Cool and roll cake: While the cake bakes, dust a clean kitchen towel generously with powdered sugar. Once baked, immediately invert the cake onto the towel and carefully peel off the parchment paper. Starting at the short end, roll the cake along with the towel and allow it to cool completely rolled up.
  9. Prepare filling: Whip heavy cream together with powdered sugar and vanilla extract until stiff peaks form.
  10. Fill and re-roll cake: Once cooled, gently unroll the cake and spread the whipped cream evenly over the surface. Re-roll the cake without the towel and place seam-side down on a serving plate.
  11. Chill and decorate: Chill the cake roll for at least 30 minutes before serving. Decorate with edible glitter, star-shaped sprinkles, and colored sugar to enhance the galaxy effect.

Notes

  • Use gel food coloring to achieve vibrant colors without thinning the batter.
  • To intensify the galaxy theme, brush the top with edible luster dust shimmer or drizzle with a dark chocolate ganache before adding decorations.
  • Make sure eggs are at room temperature for better volume when beaten.
  • Handle the cake roll gently to avoid cracks.
