Ingredients
Scale
Crust
- 1 1/2 cups crushed graham crackers
- 1/3 cup melted butter
Filling
- 2 packages Jell-O gelatin (various flavors, such as strawberry and blueberry)
- 1 cup boiling water
- 2 cups whipped cream
- 1 tablespoon lemon juice (optional, to enhance fruit flavor)
- Fresh fruit (strawberries, blueberries), sliced or whole as desired
Instructions
- Prepare the crust: In a bowl, combine the crushed graham crackers with melted butter until mixture resembles wet sand. Press this mixture firmly and evenly into the bottom of a pie dish to form the crust. Place in the refrigerator to chill while preparing the filling.
- Dissolve gelatin: Pour boiling water over two packages of Jell-O gelatin in a heat-proof bowl. Stir continuously until the gelatin is completely dissolved and the mixture is smooth.
- Mix filling: Let the gelatin mixture cool to room temperature but not set. Gently fold in two cups of whipped cream to create a light and fluffy filling. Optionally, stir in lemon juice to brighten flavors.
- Assemble layers: Spoon half of the gelatin mixture over the chilled crust, spreading evenly. Refrigerate for 30 minutes to allow this layer to partially set. Then add another layer with a different flavored gelatin mixture and sprinkle fresh fruit on top for a colorful, textured effect.
- Chill the pie: Refrigerate assembled pie for at least four hours or overnight to fully set and develop flavors. Before serving, garnish with additional fresh fruit or whipped cream if desired.
Notes
- Use different flavors and colors of gelatin for vibrant, layered presentation.
- Ensure gelatin is cooled before folding in whipped cream to prevent melting.
- Fresh fruit choice is flexible; consider seasonal berries or mandarins.
- For a firmer crust, bake graham cracker crust at 350°F for 8 minutes before assembling.
- Best served chilled and within 2 days for optimal freshness.
