Ingredients
Scale
Meatloaf Mixture
- 1 pound ground beef
- 1/2 pound ground pork (optional for extra flavor)
- 1/2 cup crushed Nacho Cheese Doritos (plus extra for topping)
- 1/2 cup shredded cheddar cheese
- 1/4 cup milk
- 1 large egg
- 1/4 cup finely chopped onion
- 2 cloves garlic, minced
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Topping
- 1/2 cup salsa
- 1 cup shredded Mexican blend cheese
- Chopped green onions or cilantro for garnish (optional)
Instructions
- Preheat and Prepare: Preheat your oven to 375°F (190°C) and lightly grease a 9×9-inch or similar-sized casserole dish to prevent sticking.
- Mix Meatloaf Ingredients: In a large bowl, combine the ground beef, optional ground pork, crushed Nacho Cheese Doritos, shredded cheddar cheese, milk, egg, finely chopped onion, minced garlic, chili powder, cumin, salt, and black pepper. Mix gently until just combined; avoid overmixing to keep the texture tender.
- Press Mixture into Dish: Evenly press the meat mixture into the prepared casserole dish, forming a compact layer for even cooking.
- Add Salsa and Bake: Spread a thin layer of salsa over the meat mixture. Place the casserole in the preheated oven and bake uncovered for 35 to 40 minutes, or until the center is fully cooked and edges begin to brown.
- Top and Finish Baking: Remove the casserole from the oven. Sprinkle shredded Mexican blend cheese and a handful of crushed Doritos over the top. Return to the oven and bake for an additional 5 to 7 minutes until the cheese has melted and is bubbly.
- Rest and Serve: Let the casserole rest for 5 minutes after baking. Garnish with chopped green onions or cilantro if desired. Slice into portions and serve.
Notes
- Use spicy Doritos or add diced jalapeños to the meat mixture for extra heat.
- This casserole pairs wonderfully with sides like sour cream, guacamole, or extra salsa.
- For a leaner option, substitute ground turkey or chicken.
- Make sure not to overmix the meat to keep the meatloaf tender.
