Description

Dollywood Cinnamon Bread with Icing is a sweet, fragrant pull-apart bread featuring soft, cinnamon-sugar coated layers baked to golden perfection and topped with a creamy vanilla glaze. This treat captures the beloved flavors of the iconic Southern theme park snack, making it perfect for breakfast, dessert, or a cozy afternoon indulgence.

Ingredients

Scale

Bread Dough and Filling

  • 1 loaf frozen bread dough (thawed)
  • 1/2 cup granulated sugar
  • 1 1/2 tablespoons ground cinnamon
  • 1/4 cup unsalted butter (melted)

Icing

  • 1 cup powdered sugar
  • 2–3 tablespoons milk
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat and Prepare Pan: Preheat your oven to 350°F (175°C). Lightly grease a 9×5-inch loaf pan to ensure the bread doesn’t stick during baking.
  2. Mix Cinnamon Sugar: In a small bowl, combine the granulated sugar and ground cinnamon thoroughly to create your cinnamon sugar coating.
  3. Roll and Slit Dough: On a lightly floured surface, roll out the thawed bread dough into a rectangle approximately 8 by 14 inches. Using kitchen scissors or a knife, carefully make 4–5 deep cuts across the dough, ensuring you don’t slice all the way through.
  4. Butter and Coat Dough: Brush the entire surface of the dough, including the slits, with the melted butter. Then generously sprinkle the cinnamon sugar mixture over the dough, making sure to get some inside the slits for maximum flavor.
  5. Fold and Place in Pan: Fold the dough lengthwise in half, gently pressing it down. Carefully transfer the folded dough into the prepared loaf pan, arranging it so it fits snugly.
  6. Bake: Bake in the preheated oven for 30–35 minutes or until the bread turns a beautiful golden brown and is fully cooked through.
  7. Prepare Icing: While the bread is baking, whisk together the powdered sugar, milk (starting with 2 tablespoons), and vanilla extract until the icing is smooth and pourable. Add more milk if a thinner consistency is desired.
  8. Cool and Drizzle: After baking, remove the bread from the oven and let it cool for 5–10 minutes. Then drizzle the prepared icing over the warm bread before slicing and serving.

Notes

  • For extra richness, add a bit of brown sugar to the cinnamon mixture or sprinkle chopped nuts inside the slits before folding.
  • This bread is best served fresh but can be reheated for 10 seconds in the microwave for a warm, soft texture.
  • You can store leftovers wrapped tightly at room temperature for up to two days.
  • Use bread dough labeled for artisan or sandwich loaf for best texture.
