Ripe bananas are caramelized in a buttery brown sugar and rum sauce, then baked under a soft, cake-like cobbler topping. It’s perfect for entertaining or a cozy night in—especially when served with a scoop of vanilla ice cream.
Ingredients
Scale
Banana Mixture
- 4 ripe bananas, sliced
- ½ cup unsalted butter
- 1 cup packed brown sugar
- 1 teaspoon cinnamon
- ¼ teaspoon nutmeg
- ¼ teaspoon salt
- ¼ cup dark rum (or 1 teaspoon rum extract)
- 1 teaspoon vanilla extract
Cobbler Topping
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- ½ cup granulated sugar
- ½ cup milk
- 1 large egg
For Serving
- Vanilla ice cream (optional)
Instructions
- Preheat and Prepare: Preheat your oven to 350°F (175°C) and grease an 8×8-inch baking dish to prevent sticking.
- Cook Bananas: In a large skillet over medium heat, melt the butter. Add brown sugar, cinnamon, nutmeg, and salt, stirring continuously until the sugar dissolves and the mixture bubbles.
- Add Bananas and Flavorings: Stir in the sliced bananas and cook for 2 to 3 minutes until they slightly soften. Remove from heat and carefully mix in the dark rum and vanilla extract to infuse the sauce with rich flavor.
- Assemble Cobbler: Pour the banana mixture evenly into the prepared baking dish. In a medium bowl, whisk together the flour, baking powder, granulated sugar, milk, and egg until smooth to form the batter.
- Add Topping: Pour the batter evenly over the banana mixture without stirring, allowing it to bake as a soft, cake-like topping.
- Bake: Bake in the preheated oven for 35 to 40 minutes, or until the topping is golden brown and a toothpick inserted into the topping comes out clean.
- Serve: Allow the cobbler to cool slightly before serving warm. For an extra indulgence, add a scoop of vanilla ice cream on top.
Notes
- You can substitute the dark rum with rum extract if avoiding alcohol.
- Use very ripe bananas for the best flavor and natural sweetness.
- Add chopped pecans to the banana mixture for extra texture and crunch.
