Description

Delightful Bananas Foster Cobbler is a warm, comforting dessert combining caramelized bananas in a rum-spiced sauce topped with a soft, golden biscuit-like crust. Inspired by the classic bananas foster, this cobbler brings the iconic flavors together in an easy-to-make, oven-baked dish perfect for sharing.

Ingredients

Scale

For the filling:

  • 4 ripe bananas, sliced
  • 1/2 cup packed brown sugar
  • 1/4 cup unsalted butter
  • 1/4 cup dark rum (or 1 tablespoon rum extract + 3 tablespoons water)
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon nutmeg
  • 1 teaspoon vanilla extract
  • Pinch of salt

For the cobbler topping:

  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup whole milk
  • 1/4 cup unsalted butter, melted

Optional:

  • Vanilla ice cream or whipped cream for serving

Instructions

  1. Preheat oven and prepare dish: Preheat your oven to 350°F (175°C) and lightly grease an 8×8-inch baking dish to prevent sticking.
  2. Make the filling: In a large skillet over medium heat, melt 1/4 cup butter. Add brown sugar, cinnamon, nutmeg, and a pinch of salt, stirring until the mixture bubbles and smooths, approximately 2 minutes. Carefully stir in the rum or rum extract mixture along with vanilla extract. Let it simmer for 1–2 minutes to cook off the alcohol if using real rum. Gently fold in the sliced bananas to coat them evenly. Remove from heat and transfer the mixture to the greased baking dish.
  3. Prepare cobbler topping: In a medium bowl, whisk together the flour, granulated sugar, baking powder, and salt. Add whole milk and melted butter, stirring just until combined to avoid overmixing.
  4. Assemble and bake: Spoon dollops of the batter evenly over the banana filling, spreading slightly to cover most of the surface. Bake in the preheated oven for 30–35 minutes or until the topping turns golden brown and a toothpick inserted into the center comes out clean.
  5. Serve: Allow the cobbler to cool slightly before serving warm. Top with vanilla ice cream or whipped cream for an authentic bananas foster dessert experience.

Notes

  • For extra richness, sprinkle chopped pecans over the bananas before adding the topping.
  • If your bananas are very ripe, reduce the brown sugar slightly to balance sweetness.
