Ingredients
Scale
Shrimp and Marinade
- 1 pound Large Shrimp (Peeled, deveined, with tails on)
- 3 cloves Minced Garlic (Fresh preferred)
- 2 tablespoons Oyster Sauce (Or soy sauce for vegetarian option)
- 1 tablespoon Soy Sauce (Low-sodium recommended)
- 1 teaspoon Sugar (Can be omitted for less sweetness)
- 1/2 teaspoon Ground White Pepper (Black pepper can be substituted)
- 1 tablespoon Sesame Oil (Olive oil can be a substitute)
Wrap and Seal
- 12 pieces Spring Roll Wrappers (Cut into thirds)
- 1 large Egg (For sealing the wrappers)
Frying
- Oil for Frying (Any neutral oil works well)
Serving
- 1 cup Sweet Chili Sauce (For dipping)
Instructions
- Prepare Marinade: In a mixing bowl, combine oyster sauce, soy sauce, sugar, ground white pepper, sesame oil, and minced garlic to create a flavorful marinade for the shrimp.
- Marinate Shrimp: Add the peeled and deveined shrimp to the marinade and toss to coat evenly. Let them marinate for 20 minutes to absorb the flavors.
- Prepare Wrappers: Cut the spring roll wrappers into thirds and lay them flat on a clean surface. Cover with a damp cloth to keep them moist and pliable for wrapping.
- Wrap Shrimp: Take one marinated shrimp and place it at one end of a wrapper piece. Roll tightly around the shrimp, then seal the edge using an egg wash made by beaten egg. Repeat this process for all shrimp pieces.
- Heat Oil: Pour oil into a deep pan and heat over medium-high heat to around 350°F (175°C), optimal for frying.
- Fry Wrapped Shrimp: Fry the shrimp in batches, cooking 2-3 minutes per side until wrappers are golden brown and crisp. Avoid overcrowding the pan to ensure even frying.
- Drain and Serve: Remove fried shrimp using a slotted spoon and drain on paper towels to remove excess oil. Serve immediately with sweet chili sauce for dipping.
Notes
- For a vegetarian or vegan option, substitute shrimp with firm tofu and use soy sauce instead of oyster sauce.
- Ensure spring roll wrappers are covered with a damp cloth to prevent them from drying out and cracking while wrapping.
- Maintain oil temperature around 350°F for optimal frying; too hot will burn the wrappers, too cool will make them greasy.
- Serve immediately to enjoy the crispy texture; leftovers can be reheated in an air fryer for best results.
