Ingredients
Scale
Main Ingredients
- 1 pound Frozen Tater Tots (These add a satisfying crunch; feel free to swap with diced roasted potatoes.)
- 1 tablespoon Olive Oil (Can substitute with any neutral oil.)
- 1 pound Breakfast Sausage (Consider using turkey sausage for a lighter option.)
- 6 large Eggs
- 1/2 cup Half and Half (Can substitute with equal parts milk and cream or just milk.)
- To taste Kosher Salt
- To taste Freshly Ground Black Pepper
- 1 can Refried Beans (Can substitute with black beans for a different flavor.)
- 4 large Flour Tortillas (Whole wheat tortillas are a nutritious substitute.)
- 1 cup Shredded Cheddar Cheese
- 1 cup Shredded Monterey Jack Cheese
- 1 cup Roma Tomatoes (Can leave out for a simpler burrito.)
- 1/4 cup Chopped Fresh Cilantro Leaves (Can substitute with green onions.)
Instructions
- Preheat and Prepare Baking Sheet: Preheat your oven to 400°F (200°C) and lightly oil a baking sheet to prevent sticking.
- Cook Tater Tots: Place frozen tater tots on the baking sheet and cook according to the package instructions, usually about 20 minutes, until they are crispy and golden brown. Allow them to cool slightly once done.
- Cook Sausage: Heat olive oil in a skillet over medium-high heat. Add the breakfast sausage, breaking it up as it cooks, and cook until browned and cooked through, about 3 to 5 minutes.
- Prepare Eggs: In a bowl, whisk the eggs until blended. Pour the eggs into the skillet with the sausage and cook until the eggs are just set. Stir in the half and half to thicken the mixture, then season with kosher salt and freshly ground black pepper to taste.
- Assemble Burritos: Lay out each flour tortilla and spread refried beans down the center. Layer evenly with crispy tater tots, the sausage and egg mixture, shredded cheddar and Monterey Jack cheeses, diced Roma tomatoes, and chopped fresh cilantro.
- Fold Burritos: Carefully fold each tortilla burrito-style by tucking in the sides and rolling tightly to enclose the filling. Place each burrito seam-side down on the prepared baking sheet to prevent unrolling during baking.
- Bake Burritos: Bake the assembled burritos in the preheated oven for 12 to 15 minutes until they are heated through and the tortillas develop a slight golden color.
- Serve or Freeze: Serve the burritos immediately for a warm breakfast, or let them cool completely before storing them in an airtight container to freeze for quick breakfasts later.
Notes
- You can substitute turkey sausage to reduce fat content for a healthier option.
- Whole wheat tortillas can be used to add more fiber and nutrition.
- If you prefer a vegetarian version, replace sausage with sautéed vegetables or plant-based sausage alternatives.
- Refried beans can be swapped with black beans or pinto beans for different flavors.
- To reheat frozen burritos, microwave for 2-3 minutes or bake in the oven at 350°F until heated through.
- Make sure burritos are cooled completely before freezing to avoid ice crystals.
