  • 1 tablespoon cornstarch
  • 2 tablespoons vegetable oil

Teriyaki Glaze

  • 2 tablespoons soy sauce
  • 1 tablespoon maple syrup or honey
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon ground ginger

Assembly

  • 1 ripe avocado, sliced
  • 2 cups cooked sushi rice or short-grain rice, seasoned with rice vinegar, sugar, and salt
  • Sesame seeds and sliced green onions for garnish (optional)


Instructions

  1. Prepare Teriyaki Glaze: In a small bowl, whisk together soy sauce, maple syrup (or honey), rice vinegar, sesame oil, garlic powder, and ground ginger until well combined. Set aside to let the flavors meld.
  2. Coat and Cook Tofu: Toss the pressed tofu cubes with cornstarch, ensuring they are evenly coated. Heat vegetable oil in a nonstick skillet over medium-high heat. Place tofu cubes in a single layer and cook for about 3 to 4 minutes on each side until they turn golden brown and crispy.
  3. Simmer with Glaze: Reduce the heat to low, pour the prepared teriyaki glaze over the crispy tofu, and gently stir to coat all cubes. Let it simmer for 1 to 2 minutes, allowing the sauce to thicken slightly and adhere to the tofu. Remove from heat.
  4. Assemble the Stack: Using a food ring or a small bowl, press a layer of the seasoned sushi rice into the mold and invert it onto a serving plate to form the base layer. Add a layer of sliced avocado on top of the rice, followed by a generous layer of teriyaki tofu cubes.
  5. Garnish and Serve: Sprinkle sesame seeds and sliced green onions over the top for garnish, if desired. Serve immediately or enjoy chilled or at room temperature for a versatile meal option.
