Instructions

Mix thoroughly until all ingredients are well incorporated. Form the mixture into 6 small, evenly sized patties. Place the patties in the refrigerator for 15 minutes to firm up, which helps them hold their shape during cooking.
- Make the Lemon Arugula Slaw: While the patties chill, whisk together the lemon juice, olive oil, honey, salt, and pepper in a separate bowl until well combined. Toss the chopped arugula and shredded cabbage (if using) in the lemon dressing. Set aside to allow the flavors to meld.
