Ingredients
Scale
Chicken and Coating
- 2 boneless skinless chicken breasts, halved lengthwise
- 1 cup buttermilk
- 1 cup all-purpose flour
- 1/2 cup breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
Sandwich and Dressing
- 1/2 cup Caesar dressing
- 2 cups romaine lettuce, chopped
- 4 sandwich buns, toasted
- 1 tablespoon olive oil (for frying)
Instructions
- Marinate the Chicken: Place the halved chicken breasts in a bowl with the buttermilk. Let them soak for at least 20 minutes to tenderize and infuse flavor.
- Prepare the Coating Mixture: In a shallow dish, combine the all-purpose flour, breadcrumbs, grated Parmesan cheese, garlic powder, paprika, salt, and black pepper. Mix thoroughly for an even coating.
- Coat the Chicken: Remove each chicken piece from the buttermilk, allowing excess liquid to drip off. Dredge it thoroughly in the prepared flour mixture, pressing gently to adhere a full coating on all sides.
- Cook the Chicken: Heat olive oil in a skillet over medium heat. Once hot, add the coated chicken pieces and cook for 4 to 5 minutes per side, or until the chicken is golden brown and cooked through to an internal temperature of 165°F (74°C). Remove from heat and let rest briefly.
- Prepare the Lettuce: Toss the chopped romaine lettuce with Caesar dressing until evenly coated and crisp.
- Assemble the Sandwiches: Place each crispy chicken breast on the bottom half of a toasted sandwich bun. Top with the dressed romaine lettuce, then cover with the top bun. Serve immediately for best texture and flavor.
Notes
- For extra crunch, double coat the chicken by dipping it back into the buttermilk and then coating it again with the flour mixture before frying.
- You can bake or air fry the chicken as a lighter alternative to frying.
- Add tomato slices or extra Parmesan cheese to enhance flavor and texture.
