  • 2 cloves garlic, minced
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • 1 tablespoon chopped fresh cilantro
  • 1/4 teaspoon red pepper flakes
  • Salt and pepper to taste


Instructions

  1. Prepare the filling: Heat a skillet over medium heat and add 2 tablespoons of cooking oil. Once hot, sauté the minced garlic until fragrant, about 30 seconds. Add shredded cabbage, carrots, and mushrooms to the skillet and cook for approximately 5 minutes or until the vegetables are tender yet still crisp.
  2. Flavor it: Drizzle 1 tablespoon soy sauce and 1 teaspoon sesame oil over the sautéed vegetables. Stir well to combine. Add salt, pepper, red pepper flakes, and chopped fresh cilantro to taste. Mix the filling thoroughly and remove from heat to cool slightly.
  3. Wrap it: Lay a spring roll wrapper on a clean surface. Place about 2 tablespoons of the filling near one corner of the wrapper. Fold the corner over the filling, then fold in the sides tightly like a burrito, rolling firmly to seal. Seal the edge with a little water to keep the roll intact. Repeat this process for all wrappers and filling.
  4. Air fry: Preheat the air fryer to 375°F (190°C). Lightly spray the air fryer basket with cooking spray. Arrange the spring rolls in a single layer without overcrowding.
