Description

This Creamy Spinach & Cottage Cheese Breakfast Bake is a nutritious and delicious start to your day, combining protein-rich cottage cheese and eggs with fresh spinach and a blend of mozzarella and Parmesan cheeses. Sautéed onions and garlic add depth of flavor, while a touch of oregano brings a subtle herbal note. Baked to a golden perfection, this gluten-free breakfast bake is easy to prepare, making it perfect for busy mornings or meal prep.

Ingredients

Scale

Vegetables & Aromatics

  • 1 cup fresh spinach, chopped
  • 1 small onion, finely diced
  • 2 cloves garlic, minced

Dairy & Eggs

  • 4 large eggs
  • 1 cup low-fat cottage cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese

Seasonings & Oils

  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon dried oregano
  • 1 tablespoon olive oil

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) to prepare for baking the casserole.
  2. Sauté Vegetables: In a skillet, heat olive oil over medium heat. Add diced onion and sauté for about 5 minutes until soft and translucent. Add minced garlic and cook for an additional minute until fragrant.
  3. Cook Spinach: Stir in chopped spinach into the skillet and cook until wilted, approximately 2-3 minutes. Remove from heat.
  4. Mix Eggs and Cheese: In a mixing bowl, whisk together the eggs, cottage cheese, salt, black pepper, and dried oregano until the mixture is smooth and well combined.
  5. Combine Ingredients: Add the sautéed spinach mixture and half of the shredded mozzarella and Parmesan cheeses into the egg mixture. Gently fold everything together until evenly combined.
  6. Assemble Bake: Grease an 8×8 inch baking dish. Pour the mixture into the prepared dish and spread evenly. Sprinkle the remaining mozzarella and Parmesan cheeses evenly over the top.
  7. Bake: Place the dish in the preheated oven and bake for 25-30 minutes, or until the bake is set and the top turns lightly golden.
  8. Cool and Serve: Let the breakfast bake cool for a few minutes before slicing into portions. Serve warm for best flavor and texture.

Notes

  • For added flavor, incorporate cooked bacon or mushrooms into the spinach mixture before baking.
  • For a creamier texture, substitute low-fat cottage cheese with full-fat cottage cheese.
  • This breakfast bake reheats well and is ideal for making ahead for quick weekday mornings.
  • Substitute spinach with kale or Swiss chard for a different twist on the greens.
  • Adding a pinch of nutmeg to the egg mixture enhances the flavor profile with a warm, subtle spice.
