- 4 large eggs
- 1 cup low-fat cottage cheese
- 1/2 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
Seasonings & Oils
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon dried oregano
- 1 tablespoon olive oil
Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C) to prepare for baking the casserole.
- Sauté Vegetables: In a skillet, heat olive oil over medium heat. Add diced onion and sauté for about 5 minutes until soft and translucent. Add minced garlic and cook for an additional minute until fragrant.
- Cook Spinach: Stir in chopped spinach into the skillet and cook until wilted, approximately 2-3 minutes. Remove from heat.
- Mix Eggs and Cheese: In a mixing bowl, whisk together the eggs, cottage cheese, salt, black pepper, and dried oregano until the mixture is smooth and well combined.
- Combine Ingredients: Add the sautéed spinach mixture and half of the shredded mozzarella and Parmesan cheeses into the egg mixture. Gently fold everything together until evenly combined.
- Assemble Bake: Grease an 8×8 inch baking dish. Pour the mixture into the prepared dish and spread evenly. Sprinkle the remaining mozzarella and Parmesan cheeses evenly over the top.
- Bake: Place the dish in the preheated oven and bake for 25-30 minutes, or until the bake is set and the top turns lightly golden.
- Cool and Serve: Let the breakfast bake cool for a few minutes before slicing into portions. Serve warm for best flavor and texture.
Notes
- For added flavor, incorporate cooked bacon or mushrooms into the spinach mixture before baking.
- For a creamier texture, substitute low-fat cottage cheese with full-fat cottage cheese.
- This breakfast bake reheats well and is ideal for making ahead for quick weekday mornings.
- Substitute spinach with kale or Swiss chard for a different twist on the greens.
- Adding a pinch of nutmeg to the egg mixture enhances the flavor profile with a warm, subtle spice.
