Ingredients
Scale
Gelatin Mixture
- 1 (3-ounce) box lemon-flavored gelatin
- 1 cup boiling water
- 1/2 cup cold water
- 1 tablespoon lemon juice
Fruit and Dairy
- 1 (8-ounce) can crushed pineapple with juice
- 1 cup sour cream
Garnish (Optional)
- Whipped topping or fresh mint for garnish
Instructions
- Dissolve Gelatin: In a medium mixing bowl, pour 1 cup boiling water over the lemon-flavored gelatin. Stir consistently for about 2 minutes until the gelatin is completely dissolved and no granules remain.
- Add Pineapple & Liquids: Stir in the crushed pineapple with its juice, 1/2 cup cold water, and 1 tablespoon lemon juice. Mix well to combine all ingredients evenly.
- Cool Mixture: Allow the gelatin mixture to rest at room temperature for 10–15 minutes, until it cools down but does not start to set. This prevents curdling in the next step.
- Incorporate Sour Cream: Whisk the sour cream into the cooled gelatin mixture thoroughly until the mixture turns smooth and creamy without lumps.
- Chill: Pour the mixture into a serving dish, mold, or individual cups. Refrigerate for at least 4 hours or until the jello is fully set and firm.
- Serve: Serve chilled, optionally topped with whipped topping or fresh mint to enhance presentation and flavor.
Notes
- You can substitute Greek yogurt or whipped cream cheese for sour cream to alter the texture and flavor.
- For added texture and visual appeal, fold in mini marshmallows or chopped nuts before refrigerating.
- This dessert is best served cold and should be kept refrigerated until ready to serve.
