  • ½ cup diced tomatoes
  • 1 ½ cups heavy whipping cream
  • ½ cup grated parmesan cheese, plus more to serve

Instructions

  1. Cook Pasta: Cook the penne pasta in a pot of salted boiling water until al dente, following the package instructions. Reserve some pasta cooking water before draining, then cover the pasta to keep warm.
  2. Cook Shrimp: Coat the shrimp evenly with 1 tablespoon of Cajun seasoning. Heat 1 tablespoon of olive oil in a deep skillet over medium heat. Once hot, add the seasoned shrimp in a single layer and sauté for about 1-2 minutes on each side until shrimp turn opaque and no longer translucent. Remove from skillet and keep warm.
  3. Sauté Aromatics: In the same skillet, melt 2 tablespoons of unsalted butter. Add the minced garlic and sauté for 30 seconds until fragrant. Then add the diced tomatoes and cook for 2-3 minutes to soften and release their flavors.
  4. Make Sauce: Pour in 1 ½ cups of heavy whipping cream along with the remaining 1 tablespoon of Cajun seasoning and ½ cup of grated parmesan cheese. Stir well and bring the mixture to a simmer. Reduce heat to medium-low and let the sauce thicken for 2-3 minutes while stirring occasionally.
  5. Combine and Serve: Return the cooked shrimp and drained pasta back into the skillet with the sauce. Toss to coat the pasta and shrimp evenly.
