For the Flatbread Pizza

  • 2 purchased flatbreads (14 oz package total)
  • 1 4-ounce package fresh goat cheese, crumbled


Instructions

  1. Preheat the oven: Set your oven to 375°F (190°C) to prepare for roasting the cranberry mixture and baking the flatbreads later.
  2. Prepare and roast the cranberry topping: In an 8×8 inch baking dish, combine the cranberries, maple syrup, shallot, thyme, and salt. Roast this mixture in the preheated oven, stirring once or twice until the cranberries burst and the mixture bubbles and caramelizes around the edges, about 15 minutes. Remove from the oven and stir until the cranberries break down and the mixture thickens. Set aside to keep warm.
  3. Assemble the flatbreads: Lay the flatbreads out on a work surface. Evenly spread the hot cranberry mixture over each flatbread, then sprinkle the crumbled goat cheese on top.
