Instructions

  1. Cook the pasta: Bring a large pot of salted water to a boil and cook 12 ounces of penne pasta until al dente according to package directions. Reserve 1/2 cup of the pasta water, then drain the pasta thoroughly.
  2. Heat the fats: In a large skillet over medium heat, warm 2 tablespoons of olive oil along with 3 tablespoons of unsalted butter until melted and combined.
  3. Sauté the mushrooms: Add the 16 ounces of sliced cremini mushrooms to the skillet in a single layer. Let them cook undisturbed for 4–5 minutes to develop a golden crust, then stir and continue cooking until the mushrooms are tender and caramelized.
  4. Add garlic: Stir in 4 cloves of minced garlic and cook for about 30 seconds until fragrant, ensuring the garlic doesn’t burn.
  5. Create the cream sauce: Pour in 1 1/2 cups of heavy cream and bring it to a gentle simmer. Allow it to cook for 3–4 minutes, stirring occasionally, until the cream thickens slightly.
  6. Melt in Parmesan: Add 1 cup of freshly grated Parmesan cheese to the skillet and stir until the cheese melts completely, making a smooth and creamy sauce.
