Instructions
- Preheat Oven: Preheat your oven to 400°F (200°C) and lightly grease a 9×13-inch baking dish to prevent sticking and ensure even baking.
- Prepare Cornbread Batter: In a mixing bowl, whisk together the cornbread mix, milk, and egg until just blended. Set the batter aside while preparing the filling layers.
- Cook Meat: In a skillet over medium heat, brown the ground beef or turkey until fully cooked, making sure to crumble the meat. Drain any excess fat to keep the dish lighter.
- Season Meat: Stir in the taco seasoning along with 1/4 cup of water to the cooked meat. Allow this mixture to simmer on medium-low for approximately 5 minutes until thickened and flavorful.
- Layer Meat: Spread the seasoned meat evenly across the bottom of the prepared baking dish to create a solid base for the casserole.
- Add Veggies: Layer the drained black beans, corn, and salsa evenly over the meat, distributing them for consistent flavor in each bite.
- Pour Batter: Pour the prepared cornbread batter over the layered filling and smooth it out with a spatula to cover the entire surface.
