Description

This fluffy Cloud Bread recipe is a low-carb, gluten-free bread substitute that’s light, airy, and perfect for sandwiches or burgers. Made primarily from eggs and cream cheese or Greek yogurt, it offers a simple, quick bread alternative that is both delicious and keto-friendly.

Instructions

  1. Preheat oven and prepare baking sheet: Preheat your oven to 300°F (150°C) and line a baking sheet with parchment paper to prevent sticking and ease cleanup.
  2. Separate eggs: Carefully separate the egg whites from the yolks, placing them into two clean bowls to ensure no yolk contaminates the whites for optimal whipping.
  3. Whip egg whites: Add cream of tartar to the egg whites and beat with a hand mixer or stand mixer on high speed until stiff peaks form, which takes about 3 to 4 minutes. This step is crucial to achieve the fluffy texture.
  4. Mix yolk ingredients: In the bowl with the yolks, whisk together the yolks, softened cream cheese or Greek yogurt, sugar or honey if making a sweet version, and salt if making savory, until the mixture is smooth and pale in color.
  5. Fold mixtures together: Gently fold the yolk mixture into the whipped egg whites using a spatula, being careful to not deflate the egg whites. Fold until just combined to maintain fluffiness.
  6. Scoop onto baking sheet: Using a spoon or scoop, create 6 to 8 mounds on the prepared baking sheet and smooth them into rounds roughly 1/2 inch thick.
  7. Bake: Place the baking sheet in the oven and bake for 25 to 30 minutes until the cloud breads are golden brown and set.
