Instructions
- Preheat oven and prepare baking sheet: Preheat your oven to 300°F (150°C) and line a baking sheet with parchment paper to prevent sticking and ease cleanup.
- Separate eggs: Carefully separate the egg whites from the yolks, placing them into two clean bowls to ensure no yolk contaminates the whites for optimal whipping.
- Whip egg whites: Add cream of tartar to the egg whites and beat with a hand mixer or stand mixer on high speed until stiff peaks form, which takes about 3 to 4 minutes. This step is crucial to achieve the fluffy texture.
- Mix yolk ingredients: In the bowl with the yolks, whisk together the yolks, softened cream cheese or Greek yogurt, sugar or honey if making a sweet version, and salt if making savory, until the mixture is smooth and pale in color.
- Fold mixtures together: Gently fold the yolk mixture into the whipped egg whites using a spatula, being careful to not deflate the egg whites. Fold until just combined to maintain fluffiness.
