Description

Christmas Crack Cookies are a delightful holiday treat featuring crispy Ritz crackers topped with buttery toffee, melted chocolate, and festive sprinkles. These easy-to-make cracker toffee cookies combine sweet, salty, and crunchy textures that are perfect for holiday gatherings or gifting.

Ingredients

Scale

Base

  • 24 Ritz crackers

Toffee Layer

  • 1 cup butter (2 sticks, salted or unsalted)
  • 1 cup brown sugar (packed)

Topping

  • 2 cups semi-sweet chocolate chips (or milk chocolate chips, white chocolate chips, or a combination)
  • 1/4 cup sprinkles (or crushed candy canes, M&M’s, etc.)

Instructions

  1. Preheat and prepare tins: Preheat your oven to 350℉ (175℃) and place a cupcake or muffin liner in each cup of your muffin tin to prevent sticking and make removal easier.
  2. Arrange crackers: Place one Ritz cracker into each muffin tin cup, creating an even base for the toffee topping.
  3. Make toffee: In a medium saucepan over medium-low heat, combine the butter and brown sugar. Stir occasionally until the mixture reaches a rolling boil. Continue boiling for 3 minutes, stirring occasionally, until the mixture turns bubbly and amber in color, indicating it’s properly caramelized.
  4. Pour toffee over crackers: Remove the saucepan from heat. Carefully ladle about 2 teaspoons of the hot toffee mixture over each Ritz cracker, ensuring they are evenly coated.
  5. Bake the toffee: Place the muffin tins in the preheated oven and bake for 3 to 5 minutes, or until the toffee begins to bubble, which helps the toffee set and get crisp.
  6. Add chocolate chips: Remove the tins from the oven and immediately sprinkle the 2 cups of semi-sweet chocolate chips evenly over the hot toffee. Let them sit for 1 to 2 minutes to soften.
  7. Spread chocolate: Using a spatula, gently spread the melted chocolate over each toffee-covered cracker. If the chocolate doesn’t melt easily, return the muffin tins to the oven for 1 to 2 minutes, then spread evenly.
  8. Add sprinkles: Sprinkle your choice of sprinkles, crushed candy canes, or other colorful candies evenly over the melted chocolate while still soft.
  9. Cool and serve: Allow the cookies to cool completely at room temperature or refrigerate for 30 minutes to 1 hour until the chocolate and toffee are set.
  10. Remove and store: Once cooled, pop the cookies out of the muffin tin, serve, and enjoy! Store any leftovers in an airtight container at room temperature or in the refrigerator.

Notes

  • Use salted or unsalted butter depending on your preference; salted butter adds a nice balance to the sweetness.
  • For variety, try different types of chocolate chips like milk chocolate, white chocolate, or a mix.
  • Sprinkles can be substituted with crushed candy canes or holiday-themed candies for festive flair.
  • Ensure the toffee mixture reaches a rolling boil for the full 3 minutes to achieve the right texture and color.
  • If chocolate hardens too quickly, briefly reheating helps it spread smoothly.
  • Store cookies in an airtight container to maintain freshness and crispness.
