Base Ingredients
- 1/2 cup peanut butter (smooth or crunchy)
- 1/2 cup cocoa powder
- 1/2 cup maple syrup or honey
- 1/4 cup almond flour or oat flour
- 1/2 teaspoon baking soda
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
Optional Add-ins
- 1/4 cup chocolate chips or chopped peanuts
Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper to prevent sticking and simplify cleanup.
- Combine Wet Ingredients: In a mixing bowl, combine peanut butter, cocoa powder, and maple syrup. Stir until the mixture is smooth and evenly blended.
- Add Dry Ingredients: Add almond flour, baking soda, vanilla extract, and salt to the wet mixture. Mix thoroughly until a dough forms.
- Add Optional Mix-ins: If using, fold in chocolate chips or chopped peanuts to the dough to add texture and extra flavor.
- Shape Cookies: Scoop tablespoon-sized portions of dough, roll into balls, and place them on the prepared baking sheet. Flatten each ball slightly using your palm or a fork to form cookie shapes.
- Bake: Bake the cookies in the preheated oven for 8-10 minutes, or until the edges are set but the center is still slightly soft. They will firm up as they cool.
- Cool: Allow the cookies to cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely to achieve the right texture and prevent breakage.
Notes
- For a gluten-free version, ensure to use almond flour or oat flour explicitly labeled gluten-free.
- Adjust sweetness by using either maple syrup or honey according to preference.
- Peanut butter type (smooth or crunchy) affects the texture of the cookies.
- Cookies firm up upon cooling, so be careful not to overbake.
- Store cookies in an airtight container at room temperature for up to 5 days.
