- 1 can (4 ounces) diced green chiles
- 2 beef bouillon cubes
- 2 cups shredded cheddar cheese
- 7 burrito-size flour tortillas
Instructions
- Prepare the Slow Cooker: Spray the inside of the crock pot with non-stick cooking spray to prevent sticking and make cleanup easier.
- Combine Ingredients: Add stew meat, enchilada sauce, diced green chiles, and beef bouillon cubes into the crock pot. Stir gently to distribute ingredients evenly.
- Slow Cook the Meat: Cover with lid and cook on low heat for 8 to 9 hours until the beef is tender and easily breaks apart when stirred.
- Assemble Burritos: Remove lid, stir the meat mixture, and using a slotted spoon, place about 1/2 cup of the beef mixture onto the center of each tortilla. Roll each tortilla burrito-style and arrange seam-side down in a 9×13 inch baking dish.
- Add Sauce and Cheese: Spoon the remaining enchilada sauce over the tops of the rolled burritos, then sprinkle evenly with shredded cheddar cheese.
- Broil the Burritos: Place the baking dish under the oven broiler for about 5 minutes or until the cheese melts and becomes bubbly and lightly browned.
