Instructions

  1. Marinate the Chicken: In a large bowl, combine olive oil, lime juice, chili powder, smoked paprika, cumin, garlic powder, onion powder, oregano, salt, and black pepper. Add the sliced chicken and toss until evenly coated. Let the chicken marinate for 15–30 minutes to absorb the flavors.
  2. Cook the Chicken: Heat a large skillet or grill pan over medium-high heat. Add the marinated chicken and cook for 5–7 minutes, stirring occasionally, until the chicken is fully cooked through and lightly charred on the edges. Remove the chicken from the skillet and set aside on a plate.
  3. Sauté the Vegetables: In the same skillet, add a bit more olive oil if needed. Add the sliced red, green, and yellow bell peppers, along with the sliced red onion. Sauté the vegetables for 5–6 minutes until they are tender and have some slight char marks for additional flavor.
  4. Combine and Heat Through: Return the cooked chicken to the skillet with the vegetables and stir everything together, heating through for another 1–2 minutes to blend the flavors.
